Ailene’s Tarragon Rice

An interesting baked rice dish. Goes especially well with Ailene’s Hawaiian Chicken.

Ingredients

1 1/2 cup long grain rice
3-4 tbsp oil
1 onion
3 cups beef broth
1 tbsp each of tarragon, curry and parsley
1 cup dry white wine or apple juice
cheddar cheese sliced (optional)

Method

Saute rice until transparent.
Cook onion in oil.
Add remaining ingredients.
Pour over rice.
Add wine.
Bake at 400 F oven for 45 minutes.
Place optional cheese on top and bake for an additional 2 minutes to melt.
