Basic Waffles

I call this a basic waffle recipe, but have added options and alternatives, adapted from the manual which came with the waffle maker. The version which I get the most compliments from is using the ingredients (if an alternate is given) highlighted in bold/italics! I use a Cuisinart waffle maker and bake each waffle for 3 minutes, until light and fluffy and not hard and crispy. Leftovers can be heated up in a toaster. Everyone’s favourite topping is good old Quebec Maple Syrup!

Mix Together in Large Bowl:

2 cups white or whole wheat flour (mix and match with different flours and rolled oats)
2 Tbsp sugar, maple syrup or honey (substitute with 1 Tbsp artificial sweetener)
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1-3/4 cups skim milk, 2% milk, buttermilk, yogurt or soya milk
6 Tbsp vegetable oil  (use 2 Tbsp of flaxseed oil and reduce vegetable oil)
2 large eggs (can be beaten to fluffy before adding)

1/2 cup of  blueberries, nuts, raisins, etc can be added for variety

If you like spices add:

1/2 tsp cinnamon or 1/2 tsp mace or 1 tsp vanilla, if you are adding blueberries
1 tsp orange zest can be added if using dried cranberries

Place ingredients in a large mixing bowl and combine until blended and smooth (I use an electric beater). Let batter rest for 5 minutes while waffle iron heats. Pour 1/3 cup batter onto the centre of the waffle iron or enough to cover the bottom evening out with a heatproof spatula to within 1/2 inch of the edge. Close lid and cook until ready. Open and remove. Freeze extras and re-heat in toaster.
