Master Baking Mix

I love this baking mix. It is so much fun during the times you are a chronic baker. I don’t remember which book I got it from, but it (or a variation of it) is in every home ec cook book. We have all made it, or at least read the recipe! Store the “mix” in a covered container at room temperature. Can even be tripled. Recipes follow and it is assumed you know some methods in putting things together. Rolling, folding, stirring, mixing, etc. Take a bunch of this mix on the boat. You can even pull it out and roll fresh fish in it as a covering prior to cooking. Add milk to a consistency for a thicker batter for fish. Who would have known from fish batter to chocolate cake!

Basic Mix

9 cups flour
1/3 cup baking powder
1 Tbsp salt
2 teasp cream of tartar
4 Tbsp sugar
1 cup non fat dry milk
2 cups shortening

Stir baking powder, salt, cream of tartar, powdered milk and sugar into flour. Sift together. Cut shortening into the dry ingredients until mixture looks like cornmeal.


Biscuit Recipe

(Yield: 15-20) 400º F. – 10 min
3 cups mix
2/3 – 1 cup water
mix until blended. Knead for 10 min.


Pancake Recipe

(Yield: 18) or Waffles (6)
3 cups mix
1-1/2 cup water
1 egg


Gingerbread Recipe

(8″x8″ pan) 350º F. – 40 min
2 cups mix
4 Tbsp sugar
1/2 cup water
1 egg
1/2 cup molasses
1/2 teasp cinnamon
1/2 t ginger
1/2 t cloves
add half liquid & beat 2 minutes
add rest of liquid and beat 1 minute


Muffin Recipe

(Yield: 12) 400º F. – 20 min
3 cups mix
2 Tbsp sugar
1 cup water
1 egg


Oatmeal Cookies Recipe

(Yield: 4 doz) 350º – 10-12 min
3 cups mix
1 cup sugar
1/3 cup water
1 egg
1 teasp cinnamon
1 cup quick rolled oats


Drop Cookies Recipe

(Yield: 4 doz) 350º – 10-12 min
3 cup mix
1 cup sugar
1/3 cup water
1 egg
1 teasp vanilla
1/2 cup nuts or chocolate chips


Coffee Cake Recipe

400 – 25 min
3 cups mix
1/2 cup sugar
1 egg
2/3 cup water
Blend and cover with topping:
1/2 cup brown sugar
1/2 teasp cinnamon
3 Tbsp butter
nuts & raisins


Yellow or Chocolate Cake

325º F. – 25 min
3 cups mix
1-1/2 cups sugar
2 eggs
1 cup water
2 tsp vanilla
(1/2 cup cocoa for chocolate cake)
Blend sugar in mix.
Beat eggs, add water & vanilla. Add to dry ingredients. Beat for 2 minutes. Bake in greased/floured 2 x 9 round pans
