Peter Gzowski’s Perfect Bread

Peter Gzowski, 1934-2002, was a well known Canadian broadcaster who, if alive today would be referred to as a foodie. I found this recipe in a magazine, I believe, sometime between 1992 and 1997. I was never a great bread maker. Actually, I basically failed at it but somehow managed to pull this recipe off!  This bread (and probably most breads) require three things in the process: Use new yeast (throw out the old stuff), knead the dough for the full 10 minutes  and have the house warm enough for the bread to rise.

Combine and set aside:

1 tsp sugar
1 pkg yeast
luke warm water

Remaining Ingredients:

1/2 cup skim milk powder
2-1/2 cup lukewarm water
5-1/2 cup flour
1 Tbsp salt

In electric mixer, starting with 3 cups of dry mixture and add the remainder gradually. Knead for at least 10 minutes. Let rise first time as long as 2-1/2 hour, until tripled in bulk and punch down twice. Letting it double each of the last two times.  Cut slashes into the tops of bread. Preheat oven to 425 deg and before  you put loaves into oven, slip a baking pan with an inch of cold water onto the bottom rack.  Bake for 20-25 minutes until loaves sound hollow, when tapped on top.
