Aggie’s Ginger Bread

I have a selection of Aggie’s recipes. She used to live next door to me. Our daughters were best friends at toddler to preschool age. Although she was a stay at home mom and I worked Monday to Friday, we were great friends. In the evenings or on the weekend I was always at her place enjoying a cup of tea and our daily catch up while the kids played together. She had three and I had one, although it started at two and one. We were close friends through her third pregnancy and my second. Ginger Bread recipes are often ones which have passed down through generations. This one is a gem!

4-2/3 cup flour
2/3 cup sugar
2 cups molasses
1-1/2 cup hot water
2 cups shortening
2 eggs
2 tsp baking soda
2 tsp ground ginger
2 tsp cinnamon
1-1/2 tsp salt

Beat all ingredients in large bowl at low speed for 30 seconds, then at medium speed for 3 minutes.

Bake in large greased pan at 325 degrees for 50 minutes
