Marion’s Marinated Carrots

These sound very weird and are not at all like I thought they would be by the name. I expected something more like a pickle but is more like a cold asian dish. This is great to bring to a potluck as a side salad.


1 lb carrots (sliced) or use baby carrots
1 green pepper
1 large onion
1 cup sugar
1/2 cup white vinegar
1 tsp salt
1 tst dry mustard
1 can condensed tomato soup
1/4 tsp pepper
3/4 cup salad oil


Cook carrots until barely done and drain and place in large bowl.
Cut pepper and onion in strips and add to carrots.
Combine remaining ingredients and pour over vegetables.
Refrigerate a few days before serving.
