Pearl’s Brown Bread

Pearl developed this bread maker recipe using Canadian flour. Yes, Canadian flour measures differently than American flour. It usually isn’t an issue unless you are using a breadmaker, as most bread recipes call for a range of the amount of flour in the recipe to be added until the dough is the right consistency. I checked a few breadmaker recipes using a variety of flour types and the range is slight, 1/4 cup or less and sometimes it is added and sometimes removed. Most often add 1/4 cup of American flour when following a Canadian recipe. The recipe below was made for a 1 and 1/2 lb breadmaker. I have no idea how I acquired this recipe nor do I know who Joan is or who she gave it to.

Ingredients

1 1/4 cups warm water
1 1/2 tbsp margarine
3/8 cup molasses (measured at 1/4 + 1/8 cup)
1 tsp salt
1/2 cup (heaping) rolled oats
2 3/4 cups all purpose flour
1 1/4 tsp fast rise yeast

Method

Add ingredients to breadmaker in the above order.
Will take approximately 3 hr 50 minutes.
Bread should not rise to touch breadmaker’s window top.
