Zucchini and Meat Spaghetti Sauce


1/2 lb (250 grams) ground beef
3 cups (750 ml) sliced zucchini
1 19 oz can (540 ml) crushed or diced tomatoes
1 tsp (5 ml) dried oregano or Italian Seasoning
1 beef bouillon cube, cut up or sachet of bouillon powder
1/4 tsp (1 ml) garlic powder
salt and pepper
1/2 cup of each chopped onions, carrots, celery (optional)


Place ground beef in large skillet.
Sprinkle meat with salt.
Turn burner to medium and cook and stir beef until browned.
Drain off fat. (Beef can be rinsed under hot water in colander, if you prefer to remove all traces of fat).
Return meat to skillet.
Add vegetables, canned tomatoes, bouillon cube or powder to skillet.
Heat to boiling.
Lower heat, cover and simmer 25-30 minutes while stirring occasionally.

Serve with hot cooked spaghetti.
