Tea Biscuits (or raisin scones)

Another Bisquick mix recipe. Always handy to have a box or two on the boat.

Ingredients from Boat Pantry:

2 cups Bisquick mix
1/2-1 cup raisins (optional for scones)
sugar for sprinkling on scones (optional)

Fresh Ingredients:

1/2 cup milk

Equipment:

1 bowl
measuring cups
2-1/2 cutter, glass or mug
mixing spoon
9×9 pan (ungreased)

Method:

Preheat oven to 450 F
Add milk to Bisquick mix and stir until soft dough forms.  (Add raisins for scones)
Place dough on surface sprinkled with Bisquick mix and roll to coat.
Shape into ball.
Knead 10 times.
Roll dough to 1/2″ thick.
Cut with cutter, glass or mug for tea-biscuits dipped in Bisquick mix.
Alternate version is to drop 8 spoonfuls of dough on the pan rather than rolling out dough.
For scones, cover 9×9 pan with dough. Cut in fours then cut each of the fours into 4 triangles.  Sprinkle triangles with sugar.   Scones will have to be cut apart again after they are baked.
Bake for 6-8 minutes or until golden brown. Yields 8 biscuits or 16 scones.
